When I make it again I will make the following changes:
- Reduce the amount of oil. It’s not necessary because it’s so flavorful.
- Ditch the rice.
- Ditch the lentils.
- Crank up the spice. I don’t typically like really spicy food but the original recipe was too mild for my taste.
- Add a touch of maple syrup. It takes down the acidity of the dish which I really liked.
The sauce is what really makes this dish. I used 2 cloves of garlic, 2 teaspoons of ginger, cumin and coriander, 1 teaspoon of cinnamon and 1/2 teaspoon of cayenne pepper. Add this to 2 tablespoons of oil and simmer spices and a 28 ounce can of tomatoes together until it makes a nice sauce.
I also added 1 tablespoon of maple syrup to cut the acidity of the tomatoes. It’s not very Middle Eastern but I think it turned out well.
